SHEER CHAI (Milk Cream Tea)

Serving size: 4 people

Ingredients :

  • cups water,
  • salt to taste,
  • 1 tsp. green tea/sheer chai,
  • 11/2 cups milk,
  • a pinch of sodium bicarbonate/phull.
  • 1 tbsp. cream (if desired).

Method:

  • Take one cup of water, tea and soda or sodium bicarbonate in or pan.
  • Boil this tea on stove till little water is left and color of tea has turned reddish brown.
  • Add one more cup of water and allow tea to boil.
  • Add 3 cups of water again.
  • Add milk to reddish colored tea. Color of tea should turn pink.
  • Add salt to taste.
  • Brew the tea for few minutes. Do not cover the pan.
  • Serve the tea hot and decorate with some cream/malai (if desired) and crushed almond and cardamom.

(If you have samovar and want to make tea in a traditional way.)

Take one cup of water, tea and soda or sodium bicarbonate

In a samovar. Add five or six large live charcoals in the funnel and allow the tea to boil. Now add another cup of water and boil till only a little is left. Next, add four cups of water and salt to taste. After this has boiled for a few minutes, the color of the tea will be reddish pink, add in the milk. Color of tea should be pink. Do not cover the tea while it is brewing. Serve hot, When serving, add cream or malai (if desired) and crushed almond and cardamom.
